Did you know...?


"Extra Virgin" refers to oil from the first pressing of the olive, which is normally a cold press with no heat used and contains less than 1% acidity. This is the purest form of the oil.


"Virgin" is made with riper olives and an acidity of 1.5%.


"Refined" is made by chemically treating virgin oil to neutralize the acid content and strong flavor. It has an acidity of 3.3%, is basically tasteless, and considered lower quality.


"Pure" is from the second pressing or chemical extraction from the olive mash left from the first pressing. It is bland and lighter in color than virgin oil.
